Known for much beyond coffee and donuts, Edgar’s Bakery, to be located at 156 Main Street, is expected to open to the public by May 2018.
The bakery and cafe will be about 5,000 square feet, and they will have about 20 employees at the location, said Dottie Smith, who owns the business along with her husband, Terry Smith.“We have always said that our customers will let us know where we need to add a bakery,” Smith said. “We have heard from our Trussville customers for several years that they would like us to come to Trussville and we have been looking for that for a long time.”
Smith said they have always wanted to open shop in downtown Trussville.
“We saw such great potential there,” she said. “We love being a part of the revitalization of such a quaint city. And Terry grew up not too far from Trussville and knows the area well. It’s a bit nostalgic for him to open a bakery in downtown Trussville.”
Edgar’s specialties are all items they had on their menu when they opened their doors 20 years ago, Smith said.
“Our chicken salad is legendary,” she said. “We use less mayo than traditional chicken salads and add a few other ingredients that give it a great flavor.”
Also, their cream cheese lemon bars and thumbprint cookies are staple items and very popular, she said, but the true draw for customers is their famous strawberry cake.
“And our King Cakes were recently selected by USA Today as one of the top 10 King Cakes in the country,” Smith said. “We were thrilled about that.”
The people at Edgar’s are what makes it stand out among other cafes and bakeries, she said.
“We have a very talented team of people that put their heart and soul into what they do,” Smith said. “They are highly skilled artisans that truly care about quality and service. They believe in what they do and it shows.”
Smith said they also take pride in that all their products are made by hand with fresh, wholesome ingredients.
“Most of our bakers and cake decorators have been with us more than 10 years,” she said.
The planned exterior of Edgar’s freestanding building will have a unique look and feel, like all their other locations, Smith said.
“We like to keep the interior a surprise until grand opening, but rest assured, it will have the traditional brick arch, as all other locations have, and the atmosphere will be welcoming,” Smith said. “We like to design spaces that invite you to stay awhile.”
